Brussels Sprout Pesto Pizza
This pizza is super easy! No time to be making home made dough. So I have been using these pizza crusts from Trader Joe’s and they’re pretty fabulous. This pizza took roughly 15 minutes to prep, and 15 minutes to cook!
Ingredients:
1 pizza crust from Trader Joe’s (the package comes with 2!)
1/2 package of Trader Joe’s Vegan Kale, Cashew & Basil Pesto
1 red onion
1 cup of brussels sprouts
1 cup of mozzarella cheese
1/4 cup of grated parmesan
1/4 cup of olive oil
Red chili pepper flakes (as much as you can handle)
Prep:
Heat a non-stick skillet with olive oil. Chop up a red onion (I don’t have a method (yet). Just cut it in large strips, and throw them in the skillet once it’s hot. Cook until caramelized (about 7 minutes)
Take out the pizza crust, spread 1/2 of the Trader Joe’s pesto package on top of the pizza, followed by the cooked red onions. Fully coat with mozzarella cheese.
In the same skillet you cook the red onions in, re-heat the skillet with more olive oil. Cut off the butts of the brussels sprouts and slice them long ways. Throw them in the pan and cook until golden brown.
Once the brussels sprouts are done, top them on the pizza, followed by parmesan cheese, and red pepper flakes.
I turned my oven to 425 and cooked the pizza for about 15 minutes (may have slightly overcooked it but it was still delicious and crispy)
