PB&J Flavored Oatmeal
I love pairing peanut butter with jelly in many different ways, especially in my oats! I love almond butter in my oats, but this recipe tastes much better with creamy peanut butter.
I usually don’t have time to cook stove-top oats during the week, which is why this 5 minute breakfast is my go-to. And it’s about $2.00 per serving and vegan :)
Ingredients:
2 packets of Quaker Oats Original Oatmeal (I use this one because there are no added sugars)
2 scoops of creamy peanut butter (I use the one from Trader Joes)
About 1/4 cup of organic blueberries
Shredded unsweetened coconut flakes
Dash of cinnamon
Prep:
Put two packets of oatmeal in a microwave safe bowl. Add water and cook.
Add 1 scoop of peanut butter, blueberries, and cinnamon immediately after removing from the microwave and mix. (The peanut butter will melt into the oatmeal and the consistency gets nice and thick, and the blueberries will cook slightly)
Top with 1 more scoop of peanut butter, the rest of the blueberries, cinnamon, and the coconut flakes.
I sometimes will buy all of these ingredients on the weekend, and make this 4 times during the week. A really cheap, healthy&hearty, plant based breakfast. And it’s just 5 ingredients :)
